TYPES OF CHAI MACHINES

Making Chai is an involved process and requires one to follow a set process. Right quantity of ingredients added at the right time along with constant monitoring to avoid boil over. So, people resort to Machine-made Teas outside homes. Following is a list of such machines along with pros and cons of the beverage dispensed by them.
  • PREMIX-BASED MACHINES

  • This technology is at least 3 decades old. They mix hot water with a premix-powder (mix of spray-dried milk, tea & spices and powdered sugar).  

    Pros:
    1. Extremely quick & dispenses tea in 5 seconds
    2. Available in multiple spice flavours
    3. Inexpensive - INR 2-3/cup
    Cons:
    1. Tastes artificial & far from the real Chai
    2. Milk powder & sugar stored inside attracts cockroaches & flies
    3. Spray dried tea if not mixed well leaves a residue on tongue after consuming
    4. Tea is not hot

  • TEA LIQUEUR BASED MACHINES

  • These machines are essentialy coffee machines in disguise and prepare Chai by mixing hot milk with stored Tea Liqueur just the way Filter Coffee is made using decoction.

    Pros:
    1. Quick process
    Cons:
    1. Non-homogeneous, light and smelly Chai
    2. Uses processed (spray-dried) spices
    3. Milk vessel is difficult to clean and stinks after a few uses
    4. Creates wastage as Tea liqueur needs to be flushed every few hours

  • TEABAG-BASED MACHINES

  • These machines dispense a mix of hot water and warm milk in a cup.  The user can then grab tea bags and dip them in the cup multiple times till the time and his desire permits.

    Pros:
    1. Supports variety as users can pick different flavoured tea bags
    Cons:
    1. Tea is light and not homogeneous as the tea leaves are not boiled
    2. Inconvenient as it requires dipping the tea bags multiple times
    3. Not hot so final Tea needs to be either microwaved or steamed
    4. Expensive as usually using 2-3 tea bags for a cup need to be used

  • PRE-PREPARED CHAI IN VESSELS

  • Chai is prepared in bulk and stored in flasks or big heated or non-heated vessels.  

    Pros:
    1. Quick as Chai is pre-prepared. Just open the tap and fill
    Cons:
    1. The flavour & freshness disappears within a few minutes of storage.
    2. Inconsistent taste from preparation and storage.
    3. Cleaning these vessels is difficult & after a few uses they stink of milk
    4. Creates a lot of wastage

THE PROBLEM WITH CHAI OUTSIDE HOMES

We Indians love Chai. We can drink it anytime, anywhere, without any reason. But the problem happens when we step outside our homes; our Chai gets compromised by Machines (as described in the next blog) by compromising the Chai making process. So much so that we quit drinking our favorite beverage and subconsciously and unknowingly become at-home Chai drinkers resorting to Coffee or water-based Teas outside homes.
